Hand harvested, destemmed, vatted by plot in stainless steel vats, macerated for 15 days with gentle daily pumping over. Devatted by gravity, blend of free-run and press juices.Blend of the plot-based wines after malolactic fermentation, then aged on delicate lees for 24 months in stainless steel vats.
