Wine:
Blended from grenache blanc and vermentino, the 2019 white Côtes du Roussillon Occultum Lapidem combines fine flinty notes from the shale with a very pure floral touch. It is a fresh, concentrated ensemble, with a structure that unfolds with delicacy and persistence, perfectly ripe. This white wine will be perfectly suited for an aperitif with tapas or at the table with grilled fish.Vinification:
Hand-harvested, 70% alcoholic fermentation in stainless steel vats and 30% in demi-muids, then aged for 9 months in the same configuration.Certified organic wine.
