The estate and the wine A new symbol of Iberia’s winemaking revival, Jumilla has earned a world-class reputation. It is here that Bodegas Olivares has built its legacy, benefiting from two key assets: its high-altitude vineyards—Jumilla’s coolest, at over 800 meters—and an extraordinary heritage of ungrafted Monastrell vines, untouched by phylloxera, thriving in limestone and sandy soils.

This rare treasure is carefully nurtured by the Olivares family, yielding intensely concentrated, aromatic grapes. These are then elevated through long macerations, meticulous indigenous yeast fermentations, and aging in large wooden vats—resulting in wines of remarkable depth and character.
Wine The 2024 White Jumilla Situla delivers a stunning expression of Sauvignon—pure, fresh, and remarkably vibrant. It’s hard to believe this wine comes from such a warm climate! With delicate white fruit aromas, a subtle hint of wisteria, and no overt oak influence, it showcases a crystal-clear precision built on finesse. A beautifully executed wine for the region, perfect for pairing with tapas or the season’s first asparagus.
Vinification Night harvest on 20 August. Pressing and fermentation in vats. Aged on delicate lees for two months.
