Wine:

Morey-Saint-Denis 2007 asserts a very elegant identity of the Pinot Noir. This wine combines the sap of the Gevrey-Chambertin terroirs with the breeding and lace of Chambolle-Musigny. It is seductively somewhere between the two. Drinking well today, it will go well with all winter and spring type dishes.

Vinification:

Traditional vinification, harvested in perforated cases. Sorted on the vine, followed by a second table sorting before de-stalking. Cold pre-fermentation maceration at a temperature of 16°C for 4 to 8 days, before the start of fermentation using natural yeasts. Aging for 16 months in oak casks, of which 30% are new.

Color:

Ruby red.

Nose:

Fruity bouquet, aromas of dark fruit (blackcurrant), redcurrants and cherries.

Palate:

Acidulous and delicious on the palate, on the palate we find lovely dark fruit notes.

Temperature:

Serve between 16 and 18°C. Decant 30 mins before drinking.

Food and wine pairing:

Feathered game, matured cheeses, roast red meat.

Enjoy up to and including 2014

Jérôme Galeyrand works on magnificent plots of old vines, here he has used all his knowhow to produce authentic wines where he has been able to draw out the best of the terroir and the vintage. Jérome moved to Burgundy in 1996, to the Gevrey plain. Today, he owns 5 hectares spread over the Côte de Nuits: Marsannay, Fixin, Gevrey, etc.
