Wine:

Of great style, the 2018 Rosé Côtes de Provence Château Cibon Hommage à Marius wine is intended for the table. Its ruddy, coppery, brick-colored hue is incredible and you can feel all the complexity acquired by time behind it. The nose mixes spices, saffron, candied orange, vermouth with some woody notes, in an amazing aromatic richness. The palate is exceptionally rich, thanks to a long maturation in wood, formulating a full wine of great character. It is a style that is completely out of the ordinary, for amateurs and the table, to be paired with a foie gras worked with smoked eel or a beautiful rabbit terrine. Olivier Poussier's favorite, rated 95/100.

Nose:

A mixture of flavors such as spices, the nose mixes spices, saffron, candied orange, cinchona, vermouth, woody notes, superb palette very rich, quite solar, important maturity of grape, aromatic almost sauternes with saffron

Palate:

A full-bodied, rich, vinous wine with character, a style that is out of the ordinary.

Food and wine pairing:

Rabbit terrine, a foie gras worked with smoked eel, a summer foie gras marbled with a dried tomato.

In a historic and preserved enclave on the edge of the sea stands Clos Cibonne. An incredible estate that enjoys a special terroir where the Tibouren grape variety expresses itself admirably. This old endemic variety, which you will not find anywhere else, makes for very original wines that confirm the region’s high potential and the vision and mastery of Brigitte and Claude Deforges, its talented winemakers. 


The rosé in particular stands out by its freshness, depth and subtlety. Here, it is the perfect balance between Provencal heritage and modernity. 

This recently created gourmet wine is completely unique: a tribute to Marius Roux, the founder of the estate, it is made from old Tibouren vines planted on the heights, and aged for 18 months in tuns.
