Wine:

The 2023 White Chablis is a pure expression of the appellation—fresh, precise, and effortlessly elegant. With no oak influence, it lets the vibrant citrus and crisp orchard fruit aromas shine, supported by a beautifully taut structure and a refined, mineral-driven texture. A benchmark Chablis, offering both accessibility and classic character. Rated 92/100 by the Selection Committee.

Vinification:

Hand harvested. Light settling, alcoholic and malolactic fermentation using indigenous yeasts, then aged on the lees in vats for a long period. Bottled 14 months after harvest.

Certified organic wine.

Color:

Bright pale yellow with green highlights.

Nose:

Very fresh, very typical of Chablis, mineral notes, oyster shells.

Palate:

With a fresh, ripe fruity flavours and a nice, lively acidity

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, cheese puffs, oysters, fish tartare, cod fillet with saffron cream, Fourme d'Ambert cheese.
