Wine:

The old vines from 1940 on the south-facing terroir of Vergisson bring an undeniable extra dimension to the wine. Aged in barrels for a year, the 2023 white Pouilly-Fuissé beautifully expresses the ripe harvest with a dominant minerality, subtle vanilla creaminess, and fresh lemony notes. The palate reveals richness and depth without excess, striking a perfect balance with ideal concentration and a pleasant bitterness on the finish. This is a remarkable bottle with a potential aging capacity of 6 to 8 years. Rated 93/100 by the Selection Committee.

Vinification:

Manual harvest, followed by a slow and gentle whole-cluster pressing. Sixty percent of the harvest is vinified in oak barrels that have held 3 to 4 wines, aging for 11 months, while the remaining 40% is aged in tanks. Alcoholic fermentation is temperature-controlled and lasts for 2 to 3 months.

Fresh and creamy, with lovely lemony and delicate vanilla notes.

Palate:

Rich and deep with sparkling fruit, this well-balanced wine releases concentrated juice with a sweetly bitter finish on the palate.

Serve between 10 and 12°C.

Scallop aumônières, sea bass stuffed with baby vegetables, foie gras au torchon, sweetbreads.
